Grilled Chicken and Vegetable Stir-Fry with Brown Rice
Ingredients:
1 cup brown rice
2 chicken breasts, sliced
2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots, etc.)
2 cloves garlic, minced
2 tbsp low-sodium soy sauce
1 tbsp olive oil
Salt and pepper to taste
Instructions:
Cook brown rice according to package instructions.
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and cook for 1 minute.
Add sliced chicken to the skillet and cook until browned and cooked through.
Add mixed vegetables to the skillet and stir-fry until tender-crisp.
Stir in cooked brown rice and soy sauce. Cook for an additional 2-3 minutes, stirring frequently.
Season with salt and pepper to taste. Serve hot.
