Grilled Chicken and Vegetable Stir-Fry with Brown Rice

Ingredients:

  • 1 cup brown rice

  • 2 chicken breasts, sliced

  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots, etc.)

  • 2 cloves garlic, minced

  • 2 tbsp low-sodium soy sauce

  • 1 tbsp olive oil

  • Salt and pepper to taste

    Instructions:

    1. Cook brown rice according to package instructions.

    2. In a large skillet, heat olive oil over medium-high heat. Add minced garlic and cook for 1 minute.

    3. Add sliced chicken to the skillet and cook until browned and cooked through.

    4. Add mixed vegetables to the skillet and stir-fry until tender-crisp.

    5. Stir in cooked brown rice and soy sauce. Cook for an additional 2-3 minutes, stirring frequently.

    6. Season with salt and pepper to taste. Serve hot.
