Grilled Salmon with Asparagus and Quinoa

Ingredients:

  • 4 salmon fillets

  • 1 bunch of asparagus, trimmed

  • 1 cup quinoa

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Lemon wedges for serving

    Instructions:

    1. Cook quinoa according to package instructions.

    2. Preheat grill to medium-high heat.

    3. Brush salmon fillets and asparagus with olive oil and season with salt and pepper.

    4. Grill salmon for about 4-5 minutes per side or until cooked through.

    5. Grill asparagus for about 3-4 minutes, turning occasionally until tender.

    6. Serve grilled salmon and asparagus over cooked quinoa with lemon wedges.
