Grilled Salmon with Asparagus and Quinoa
Ingredients:
4 salmon fillets
1 bunch of asparagus, trimmed
1 cup quinoa
2 tablespoons olive oil
Salt and pepper to taste
Lemon wedges for serving
Instructions:
Cook quinoa according to package instructions.
Preheat grill to medium-high heat.
Brush salmon fillets and asparagus with olive oil and season with salt and pepper.
Grill salmon for about 4-5 minutes per side or until cooked through.
Grill asparagus for about 3-4 minutes, turning occasionally until tender.
Serve grilled salmon and asparagus over cooked quinoa with lemon wedges.
